Oven Baked Pancakes

1/2 cup milk
1/2 cup all-purpose flour
1/2 teaspoon baking soda
3 eggs
1 teaspoon sugar
Dash salt
3 Tablespoons butter
1/4 cup sugar
1 teaspoon cinnamon
2 apples, peeled, cored, and sliced
1/3 cup currants
1/3 cup chopped walnuts
1/4 cup sugar mixed with 1 teaspoon cinnamon
2 Tablespoons butter
Whipped cream

In a small mixing bowl, mix the milk, flour, baking soda, eggs, sugar and salt together until smooth; set aside. In a heated oven, melt butter in the bottom of a nine inch skillet with and ovenproof handle. Mix in sugar and cinnamon, sauteed apples, currants ad walnuts in butter until soft, but not mushy. Pour batter over the apples. Bake in a 400 degree oven for 10 minutes. Remove from the oven, top with sugar/cinnamon mixture. Return the pan to the oven for 15 minutes. Serve immediately topped with whipped cream.
Note:
This recipe can be made in individual, 4-inch baking dishes.
Variation:
instead of apples, currants and walnuts, use 2 pears, cored and sliced plus 1 cup of frozen or fresh cranberries and add 2 Tablespoons Grand Marnier before you finish sauteing.
