Ham
and Potato Casserole

cup diced frozen potatoes with peppers and onions
1/4 cup cubed ham
1/2 teaspoon tarragon
2-3 eggs depending on size
Half and Half (or milk)
Salt and Pepper to taste
1/2 cup shredded cheddar cheese
Spray
two 12 oz oven-safe casseroles with cooking spray. Divide
potatoes and ham between casseroles. Season with tarragon,
salt and pepper. Mix eggs in measuring cup; add enough half
and half to make 1 cup. Divide between casseroles pouring
over potatoes and ham. Bake at 325 for about 30-40 minutes
until set. Top with shredded cheese and return to oven until
cheese is melted.
