Florida Orange/Cranberry Coffee Cake
1 package
Betty Crocker Cranberry Orange Quickbread Mix
2/3 c water
2 tbs vegetable oil
2 eggs
1/3 cup chopped orange segments
1 (3 ounce) package cream cheese (softened)
1/2 cup confectioners' sugar
3 tablespoons chopped pecans (optional)
Preheat oven to 350 degrees
Grease bottom of 8X8 or 9X9 pan
Stir together Quick Bread mix, water, oil & eggs until
well blended - may be a little lumpy. Stir in orange segments
Spread into pan
Bake 8 - inch pan 30 - 35 minutes
Bake 9 - inch pan 25 - 30 minutes
or til toothpick inserted in center comes out clean. Cool
completely before frosting.
Frosting
Mix at medium speed: cream cheese, powdered sugar & 1
tablespoon fresh orange juice until mixture is smooth.
Frost cake with frosting and spinkle on pecans.
